Most people would probably think deciding to start a winery is something you do after many years of planning, saving, and learning about the craft of wine-making. Well, sometimes it happens a little differently. Jim and Karen grew up in the great outdoors of Alaska, enjoying a country few people get to see for extended periods of time. Jim Waite, in Anchorage, and Karen Viale, in Seward, never dreamed how their futures would become intertwined, then slowly point them to Walla Walla where they would join with son, Joel, to start CAVU Cellars.
Sauvignon Blanc
This wine has fresh aromas of apricot and pear that merge with lively flavors of grapefruit, passion fruit, and guava, ending with a zingy finish. If you enjoy a white wine with seafood or shellfish, or while sitting outside on a summer day, this is sure to be a favorite of yours.
Barbera Rose'
This elegant copper-colored Rose’ offers an intriguing nose of strawberries, Rainier cherries, orange blossoms, plum, and spices. The flavors are lively and well extracted, with undertones of squeezed berries, Damson plum juice, and orange peel, followed by a dry, persistent finish. The balance of flavors and acidity makes this Rose’ an excellent wine to enjoy with pork, salmon, tuna, sushi, or with friends on a warm sunny day.
